To make this vegetarian, simply swap the chicken broth for vegetable broth — everything else stays the same. Leftovers keep in the fridge for up to 3 days; reheat gently over low heat to avoid the dairy separating, and stir in a splash of extra half-and-half or broth if the soup has thickened up too much.
