  • FOR THE CREPES:
  • 125g all-purpose flour
  • 2 large eggs
  • 300ml whole milk, room temperature
  • pinch of salt
  • butter for pan
  • FOR THE FILLING:
  • 250g whole milk ricotta cheese
  • 150g cooked spinach, finely chopped
  • 50g grated Parmesan cheese
  • 1 large egg
  • to taste salt and pepper
  • pinch of nutmeg
  • FOR ASSEMBLY & SAUCE:
  • 500ml béchamel sauce (see note)
  • 50g grated Parmesan cheese
  • butter for baking dish
  1. Prepare the crepe batter by combining flour and a pinch of salt in a large mixing bowl. Create a well in the center and crack the eggs into it. Whisk the eggs briefly, then gradually incorporate the flour while slowly pouring in the room-temperature milk. Whisk until a smooth, thin batter forms with no lumps. The consistency should be like heavy cream—thin enough to spread in a paper-thin layer but thick enough to hold together. Let the batter rest for 10 minutes at room temperature; this allows the flour to fully hydrate.
  2. Heat a non-stick crepe pan or 8-inch skillet over medium heat. Lightly butter the pan, then remove it from heat briefly. Pour about 3 tablespoons of batter into the center and immediately tilt the pan in all directions to spread the batter into a thin, even circle covering the bottom. Return to heat and cook for about 1–1.5 minutes until the bottom is very lightly golden, then flip and cook the other side for about 30 seconds. Transfer to a plate. Repeat with remaining batter, stacking crepes as you go. You should have about 12 crepes total.
  3. Prepare the filling by combining ricotta, chopped cooked spinach, grated Parmesan, egg, salt, pepper, and a pinch of nutmeg in a medium bowl. Mix gently until smooth and well combined. The mixture should be creamy but hold its shape.
  4. Preheat the oven to 180°C (350°F). Lightly butter a 9x13-inch (23x33-cm) baking dish. Place one crepe on a clean surface and spread about 2–3 tablespoons of filling evenly across the surface, leaving a small border around the edges. Roll the crepe tightly but gently from one end to the other, being careful not to tear it. Place seam-side down in the prepared baking dish. Repeat with remaining crepes and filling, arranging them in a single layer, side by side in the dish.
  5. Pour the warm béchamel sauce evenly over the rolled crepes, making sure to coat all of them. The sauce should cover them like a blanket, binding them together. Sprinkle the remaining 50 grams of grated Parmesan cheese evenly over the top.
  6. Bake uncovered for 25–30 minutes, until the top is golden brown and the sauce is bubbling at the edges. The béchamel will puff slightly and turn a beautiful pale gold.
  7. Remove from the oven and let rest for 5 minutes before serving. This allows the crepes to set and makes them easier to plate without falling apart. Serve hot, with a spoon to transfer the crepes and sauce together onto warm plates.

Note on Béchamel Sauce: To make béchamel from scratch, melt 40g butter over medium heat, whisk in 40g flour to form a paste, then slowly add 500ml whole milk while whisking constantly until smooth and thickened. Season with salt, pepper, and a pinch of nutmeg. The sauce should be thick enough to coat the back of a spoon.

Crespelle alla Fiorentina is where Italian elegance meets French refinement—a dish born from the culinary exchange between nations. The crepes themselves are delicate and refined, requiring a gentle hand and patience. The filling of ricotta and spinach is simple yet luxurious, and the béchamel sauce ties everything together in a silky embrace. This is a showstopping dish that seems complicated but is actually quite achievable with attention to detail. It is perfect for elegant dinners, special occasions, or when you want to impress without spending hours in the kitchen. Make it ahead, refrigerate it covered, and simply bake when ready. It is the kind of dish that makes your table feel like a Florentine trattoria.
