  1. Place the chicken breasts in the slow cooker in a single layer.
  2. In a bowl, whisk together the chicken broth, butter, garlic, thyme, Dijon mustard, salt, and pepper. Pour the mixture evenly over the chicken.
  3. Cover and cook on low for 2.5–3 hours, just until the chicken is cooked through and tender. Avoid overcooking—lean breast can dry out if left too long.
  4. Remove the chicken to a plate and shred or cut it into bite-size pieces.
  5. Whisk the cornstarch and water together into a smooth slurry. Stir the slurry and the heavy cream into the liquid in the slow cooker.
  6. Return the chicken to the pot, stir to coat, and cook on high for 10–15 minutes until the gravy has thickened. Serve over rice, mashed potatoes, or egg noodles.
