- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, finely chopped
- 1 1/2 cups brown lentils, uncooked
- 1/2 cup rolled oats
- 1/2 teaspoon turmeric
- 8 cups vegetable stock
- 1/2 teaspoon salt, or to taste
- 1/2 teaspoon ground black pepper, or to taste
- Fresh lemon juice, for serving (optional)
Directions
- Heat the olive oil in a large pot over medium-high heat until sizzling hot, about 1 minute.
- Add the onion, garlic, and parsley, and sauté until fragrant, about 2 to 3 minutes.
- Stir in the lentils, oats, and turmeric until everything is well combined and coated.
- Pour in the vegetable stock and stir to combine. Bring to a boil, then reduce the heat to low and simmer, stirring often, until the lentils and oats are fully cooked and the soup has thickened, about 20 to 25 minutes. Adjust the consistency with a splash of water or extra stock if it gets thicker than you'd like.
- Season with salt and pepper to taste. Squeeze fresh lemon juice over the soup just before serving, if desired, and serve immediately.
