Thai Chicken Satay with Peanut Sauce

  • 2 tablespoons red curry paste
  • 3/4 cup natural peanut butter, smooth
  • 1/4 cup white sugar
  • 2 teaspoons dark soy sauce
  • 1 teaspoon cooking salt / kosher salt
  • 2 tablespoons cider vinegar
  • 3/4 cup water

  1. If you plan to cook the skewers on a barbecue or over charcoal, soak the bamboo skewers in water for 2 hours beforehand so they don't scorch or catch fire; if you're pan-frying on the stovetop as this recipe does, you can skip straight to marinating the chicken.
  2. In a bowl, combine the chicken thigh pieces with the curry powder, sugar, red curry paste, salt, and 1/4 cup of the coconut milk. Mix well so every piece is coated, then let it marinate for at least 20 minutes at room temperature, or cover and refrigerate overnight for even deeper flavor.

  6. Stir to combine, then let the sauce simmer gently, stirring occasionally, for about 5 minutes until it thickens slightly and the flavors meld. Adjust the consistency with a splash more water if needed — you're aiming for a pourable but still thickish sauce, not a thin liquid.
  7. Cover the saucepan and keep the peanut sauce warm over low heat while you finish cooking the remaining skewers.
  8. To serve, pour some of the peanut sauce into a small bowl and sprinkle with a few of the chopped peanuts, stirring some through if you like. Pile the cooked skewers onto a serving platter and scatter over the remaining chopped peanuts, along with fresh coriander and sliced red chilli if using.
  9. Serve the skewers with the peanut sauce on the side for dipping, plus lime wedges if you'd like a bit of brightness. A side of jasmine rice or Thai fried rice turns this into a complete meal.
